THE PETIT POT is the rustic cousin of the Crème brûlée. Rustic, but with its own subtlety. Though this is a creamy, rich-tasting dessert, it is still not a sugar powerhouse that you get in a Crème brûlée or other custards. In perfecting this we kept going for the minimum amount of sugar to qualify as sweet rather than the maximum you could tolerate before your fillings started to vibrate. You can try other syrups. Rose’s lime juice, Grand Marnier, kirsch—all make delicious variation. Remember though, if you use sweet syrups and liqueurs, you will decrease the amount of granulated sugar called for.
